Our client is a leading provider of integrated hospitality and support services for remote sites.
They are currently seeking an Italian speaking Catering Manager for one of their oil and gas clients compound near to Basrah, Southern Iraq. The position is on an open ended contract.
Reporting into the Operations Manager, the successful candidate will be responsible for supervising and co-ordinating all menu making, pricing, food presentation, sanitation, food promotion and employee scheduling and for ensuring the quality preparation and service at all times.
Specifically you will follow the contractual obligations, our clients policies and procedure and will maintain all ISO standards and requirements.
You will analyze food and beverage operations from the standpoint of operating costs, increasing sales, efficiency, merchandising principles, work simplification and sanitation; making specific corrections and recommendations necessary for optimum performance; maintain payroll control.
You will develop and conduct training sessions, or workshops for food and beverage department personnel.
You will follow up programs and policies to ensure compliance with prescribed methods and standards.
You will report to Management for assignments and instructions, co-ordinating your functions and activities with other Department Heads.
You will provide functional assistance and direction to food and beverage Department Heads in all matters pertaining to food and beverage operations and issues instructions as the need arises.
You will supervise and co-ordinate all menu making, pricing, food presentation, sanitation, food promotion and employee scheduling; ensure quality preparation and service at all times.
You will co-ordinate with purchasing to ensure that all purchases conform to food and beverage specifications and quality.
You will approve and sign all food and beverage department orders.
You will direct weekly food and beverage department meetings covering all necessary subjects pertaining to proper function of the department, including future banquets, operational problems, possible changes in procedures, new management policies.
You will maintain an up-to-date recipe file showing a complete cost breakdown and preparation for all items on the menus, as well as specialty items which would be considered for future use.
You will develop job descriptions for all positions in the food and beverage department in order to orient new employees properly.
You will engage and release food and beverage staff.
You will carry out daily inspections of the food and beverage departments including all restaurants, kitchens, storerooms, employees' cafeteria and other areas under your control.
You will develop new ideas in conjunction with Department Heads which will increase sales, reduce costs or increase the productivity of the food and beverage operation.
You will prepare monthly reports, showing the difference in sales and cost figures for the current month and year vs. the previous month and year.
Finally you will supervise and coordinate all active sales and P.R. activities pertaining F & B business units and the Conference and Banqueting department.
You should be an energetic and accomplished Italian and English speaking Catering Manager/ Chef Manager with experience of menu planning, stock ordering and managing budgets / costs etc.
You should be highly self-motivated with the ability to communicate and motivate a varied team and have extensive experience of preparing, cooking and serving Italian food.
Ideally your experience should be supported by a Degree or other qualification in catering and hospitality or food and beverage management.
Experience of working in contracted catering services, in a remote site environment or for a leading international facilities management provider would be ideal, as would experience of working in post conflict areas or in other arduous environments.
You will have an excellent understanding of commercial catering operations and specifically a high degree of knowledge on food hygiene including HACCP, food handling and food presentation concepts and knowledge of popular catering and bakery products.
You should possess excellent verbal and written communication skills in English and Italian, be able to adapt to rapid changes in a positive manner and work to tight deadlines.
Superb inter-personal skills and instant credibility are essential as you will be inter-facing with a number of people from different backgrounds, nationalities and religions.
You will be resourceful with a flexible outlook, have the ability to multi-task in order to handle competing priorities and be able to fit in to an international dynamic and multi-cultural environment.
Finally you should possess a Drivers Licence and be PC / IT literate. This is an outstanding challenge for an accomplished Italian speaking Catering Manager looking for something different.
The basic salary is paid in USD and is tax free for an Ex-Patriate employee.
Accommodation, laundry, local transport, insurances and meals are all provided free.
In addition you will have the use of a phone to call family and friends and also use of the internet for e-mails etc.
Work rota is 3 months on, 2 weeks off plus 2 days travelling. Mobilization and De-Mobilization flights are paid for by our client.
