The project aims to characterize, through advanced metabolomics techniques (e.g., HPLC-PDA, UHPLC coupled with Triple Quadrupole Mass Spectrometer (TQMS), UHPLC, GC-MS), the metabolic activity of these microorganisms during fermentation, examining substrates such as phenolic compounds, fatty acids, and proteins in food matrices. The study will evaluate the release of phenolic derivatives, hydroxy fatty acid derivatives, and bioactive peptides for their antimicrobial, antifungal, and anti-inflammatory properties.
